Dried nutmeg fruit (Myristica frangrans) is sorted into its two component products; nutmeg and mace. Like nutmeg, which is the fruit’s kernel, mace, its veiny outer covering, is used as a spice in food, giving a much more intense flavour than nutmeg; and described as a mix of cinnamon and pepper. Essential oils obtained from mace and nutmeg are also used in the perfume industry.
